Gluten/Dairy Free Banana Bread

I made a really fantastic loaf of sweet banana bread for my son and I yesterday.  It was so delicious I knew I wanted to share the recipe with you all:

  • 3 ripe bananas
  • 1 cup sugar
  • 1/2 cup vegetable oil butter such as Earth Balance
  • 3 eggs
  • 1 ts. vanilla
  • 1/4 ts. salt
  • 1 ts. baking soda
  • 1/4 ts. cinnamon
  • 2 cups rice flour
  • 1/2 cup chopped pecans
Mix the bananas, sugar, butter, eggs and vanilla.  Then add the remaining ingredients.  Pour batter into desired pan and bake at 350 degrees for 60 minutes for a loaf.

I'm so delighted to have made something that my son can enjoy without the cost of "an arm and a leg"!
