Zucchini Gigantor

I've been so busy this past week that I haven't gone out to the vegetable garden to see if there was anything new, ripe and ready to eat.  I decided I would check in yesterday evening and look at what we found...


We aren't really sure what to do with it quite yet.  Grill?  It's HUGE!!!  I also picked a medium sized bowl of cherry tomatoes and am going to add them to my skillet for dinner tonight.  Anyone with a really great Zucchini bread recipe?  I think I will be baking this week:)

    Harvesting:


    Pick zucchini when they are young (four to six inches) and tender. Some people wait until the fruit becomes a monster. While definitely still edible, it is tougher and the skin may need to be peeled.

    Some people enjoy seeing just how big they can grow them! If this is you, grow one or two monsters for show. Pick small ones to eat.

  3. Zucchini are coming out my ears too! They are very fast growers if you leave them a few days they get huge in a hurry! The big ones are good for baking. Look at allrecipe.com, they have so many different recipes. I'll send you the few that I have tried. Super yummy stuff. Keep up the good growing!

  5. Here is my Mom's recipe:
    3 eggs
    1c. vege oil
    2c.sugar
    3t. cinnamom
    1c. chopped walnuts (optional)
    3c. flour
    1t. salt
    1t. baking soda
    1/4t. baking pwd
    3t. vanilla
    2c. grated zucchini w/peel
    Beat eggs, oil, sugar together. Then add zucchini, vannila, salt, cinnamon, baking soda & pwd, walnuts and mix. Add flour last. Grease pans & bake. Preheat oven to 350. Recipe will make 2 large loaves or 4 small. Be careful to NOT over fill the loaf pans with batter or it will spill out all over the place and not bake right. Bake times: 60 min for large loaves (check at 50min) & 30-45 min for small. Use a tooth pick to check center to see if done!

  6. One more thing. Chelsea adds a crumb top and it is delicious! 1/2 c melted butter, 1 c. brown sugar, 3/4 c. oatmeal, 1 c. flour & 1 t. cinnamon. Mix well and sprinkle on top of batter. Yum!!!
